Techniques Series

Break down the barriers of home cooking and baking from fridge to table. Novices and culinary wizards alike will benefit from hands-on instruction on cooking and baking basics like knife skills, cooking techniques, and creating bakery-worthy pastries.

Techniques of Cooking (6 Week Series)
This series is designed to teach the novice home chef and budding culinarian the essentials for everyday cooking and entertaining. You will also learn proper food handling, food safety, and basic knife skills that will elevate your cooking ability to the next level.

Week 1 – Knife Skills: Kick off this in-depth series by slicing and dicing your way to culinary proficiency. Learn how to select and sharpen knives, practice a variety of cuts, and work with uniquely shaped vegetables.
Week 2 – Eggs: Did you know the 100 folds of a classic chefs’ toque are said to represent the many ways a chef can cook an egg. Learn about the science of cooking an egg in many forms from whole to yolks and whites to foams. Recipes may include hollandaise sauce, omelets, soufflés, and custards.
Week 3 – Soups and Stocks: A good stock is the foundation of all great cooking. Start with the basics: beef, chicken, veal, and vegetable stocks. From these bases, you will make a variety of soups, like Southwest squash, fennel corn chowder, and vichyssoise.
Week 4 – Dry Heat Cooking: Discover the difference between radiant, conduction, and convection heat sources through roasting, grilling, and sautéing. You’ll learn and practice with the cuts of meat best cooked by the dry heat method. Possible recipes include skirt steak, grilled swordfish verde, and honey spiced pork.
Week 5 – Moist Heat Cooking: Learn the braising, stewing, and poaching methods categorized as moist heat cooking. Utilize the stove top and oven to discover differences between techniques, and the benefits of using aromatic stocks. Tackle recipes such as Ossobuco, braised short ribs, and rabbit fricassee.
Week 6 – Master Sauces: Nothing elevates good home cooking like a masterful sauce! This course will explore the classic mother sauces and their myriad of flavors, textures, and colors. Applying the skills you’ve honed over the past five weeks, you’ll learn the secret to making a truly impressive dish.

Techniques of Cooking II (6 Week Series)
After mastering some impressive skills and techniques in Techniques of Cooking I, you will want to take your abilities to the next level. Learn additional techniques for preparing vegetables, chicken, meat, fish, and pasta; and make it all come together in a complete meal sure to wow even the pickiest dinner guests.

Week 1 – Vegetables, Grains, and Beans: Some techniques are best suited for cooking spring/summer vegetables, while others are best for fall/winter vegetables. Learn the differences while preparing soups, salads, sides, and vegetarian entrées.
Week 2 – Poultry: Buying a whole chicken is more economical than buying parts, so it’s time you learned some de-boning methods, dividing the whole chicken into workable parts. Practice your moist heat and dry heat cooking skills while turning chicken breasts, wings, and legs into novel dishes.
Week 3 – Meat: No one wants under or overcooked meat. Take the angst out of cooking meat by learning how to properly prepare different cuts of beef, pork, and lamb following the best methods for each protein type and cut. You’ll build complete dishes with pan sauces and sides.
Week 4 – Fish: Living in New England, you’ve got to learn how to properly cook fish! Practice techniques of preparing fin fish, shellfish, and crustaceans. You’ll incorporate many of the cooking techniques you’ve mastered up to this point, preparing some delicious seafood dishes sure to impress your friends and family.
Week 5 – Pasta: Who doesn’t love fresh pasta? This class covers the fundamentals of pasta making like rolling, cutting, filling, and pairing pasta shapes with sauces. You will make dough from scratch, form pasta in many shapes, and make some bold and flavorful sauces to complete each dish.
Week 6 – Company’s Coming: You are now ready to flaunt those skills! Working with the techniques and cooking methods covered in Techniques of Cooking I and the first 5 weeks of this series, build a complete menu to impress any dinner guests from appetizers though dessert.

Techniques of Baking (4 Week Series)
If you think baking is too precise or difficult, this class will transform you! Learn the basic techniques of yeast breads and delicious, yet simple cakes. Impress friends and family with scrumptious cream puffs, breads, pie crusts, and cakes.

Week 1 – Pâte à Choux: Discover the art of making pâte à choux, also known as cream puff paste. You will prepare and sample dishes such as assorted savory gougère, cream puffs, Éclairs, and show-stopping cream puff swans!
Week 2 – Pies and Tarts: Explore the fundamentals of making the perfect pâte brisée (pie crust). You’ll make the dough from scratch, learn how to roll it out, and use it in various recipes like frangipane fruit tarts, praline sweet potato pie, and cranberry crumb pie.
Week 3 – Breads: Work with yeast doughs, rich doughs, and batter doughs from start to finish. Learn how to knead, shape, and bake focaccia, rosemary garlic bread, maple-pecan sticky buns, and classic French bread.
Week 4 – Cakes: The next birthday cake is on you! Learn the techniques and recipes for butter cakes like rich flourless chocolate cake and carrot cake, and develop some simple decorating techniques utilizing an array of different buttercream, ganache, and simple glazes.

Techniques of Baking II (4 Week Series)
Now that you’ve gained knowledge and mastered the skills from Techniques of Baking, let us take you further. Impress your friends and family with light cakes, flaky puff pastry, sweet meringues, and the most decadent chocolate desserts and luscious dessert sauces.

Week 1 – Puff Pastry: Learn how to fold butter into flaky pastry dough that serves as a base for tons of sweet and savory dishes. Focusing on the classic French method for making and handling puff pastry, you’ll learn the classic recipe and techniques and the method for making a “quick puff.” With these bases made, you’ll create sweet and savory treats like Palmiers, Napoleons, and turnovers.
Week 2 – Meringues: Let’s start whipping your skills into shape. You’ll be amazed at how many incredible recipes start with egg whites. Explore the possibilities with recipes like Italian meringue buttercream, Bavarian cream, and French dacquoise.
Week 3 – Cakes II: We love a good butter cake, but these light-as-air sponge cakes will transport you right into a European bakery. Learn to make classic sponge cake, ladyfingers, and the French classic Génoise. You’ll also make an array of buttercreams and ganache, focusing on artful assembly and presentation.
Week 4 – Chocolate: Chocolate lovers rejoice! It’s time to learn a bit about the rich history of chocolate, discover great sources for buying chocolate, and develop proper tempering techniques. You’ll wrap up the series by making some truly decadent desserts like chocolate soufflés and truffles.

Just Cakes! (4 Week Series)
We think Julia Child said it best: “A party without cake is just a meeting.” Whether vanilla, chocolate, simple, elaborate, layered, bundt, or otherwise, cake holds a special place in our hearts. Join our cake-only techniques series to learn new techniques, styles, and recipes for cake preparation and decorating. From classic to modern and everything in between, practice decorating with butter cream, whipping up genoise, or creating luscious fillings to brighten every event with the ultimate symbol of celebration.

Week 1 – Foam Cakes: Foam cakes are light, airy cakes made of flour, sugar, eggs, and in some cases butter. The fluffiness comes from beating air into egg whites, which lets any subtle flavors shine. We love these cakes at tea time!
Week 2 – Butter Cakes: Butter cakes, like pound cake, are made with significant quantities of butter and a chemical leavening product such as baking soda or baking powder to build up heft. Our butter cake recipes include jams, ganache, buttercream fillings, and frosting to create showstopping centerpieces.
Week 3 – Flourless Cakes: These naturally gluten-free cakes make dessert accessible to our gluten-intolerant friends and those with Celiac disease. We also love them for their rich, decadent flavor and versatility.
Week 4 – Tortes and Layer Cakes: Typically made with many eggs and little flour, these luscious beauties are often filled with layers and layers of whipped cream, buttercream, mousse, jam, or fruit. They’re often reserved for upscale or elaborate evening celebrations where the dessert is the star of the whole menu.

Each immersive six-week regional series is designed to bring the best of a region’s cuisine to our kitchens. Create entire meals utilizing regional ingredients, flavor profiles, and cooking methods. The locals would be proud!

Flavors of the Mediterranean (6 Week Series)
As the people of the Mediterranean discovered long ago, fresh ingredients, simply prepared with olive oil, garlic, herbs and spices, are perfect for sharing around a table with family and friends. Rooted in ancient traditions, and spanning 21 countries, the Mediterranean way of eating largely includes plant-based foods – vegetables and fruits, beans and nuts, healthy grains, fish, olive oil, small amounts of meat and dairy, and red wine. Travel along the Mediterranean coast, basing your journey in some of the major historical trading cities, and explore the cooking techniques, flavor profiles, and ingredients appearing along the way.

Week 1 – Thessaloniki and the glories of Greece: Thessaloniki is a paradise for foodies, best known for quality, variety, and the mixing of traditional recipes with modern trends. This cuisine is characterized by the use of feta, olives, and honey, as well as spices such as oregano, mint, dill, and thyme.
Week 2 – Naples, Palermo and the South of Italy: The foundation in the history of Italian cooking. Southern Italian cuisine is filled with bold flavors showcased by tomatoes, olive oil, and plenty of fresh herbs.
Week 3 – Marseilles, Barcelona, Seville (The French and Spanish Mediterranean coasts): A healthy yet flavorful menu flows through the coast. Tastes of fresh seafood, garlic, legumes, herbs, and vegetables unite these regions.
Week 4 – Algiers and the Maghreb (Algeria, Morocco, Tunisia): These regions offer a rich cuisine filled with semolina breads, couscous, and meat seasoned with a distinctive mixture of spices.
Week 5 – Beirut, Damascus, and Jerusalem – The Levant (Lebanon, Syria, Egypt and Israel): Levantine cuisine is filled with fresh herbs and spices like cumin, turmeric, and cardamom, as well as a variety of nuts and beans. Popular dishes include hummus, falafel, and shawarma, but there is so much more this region has to offer.
Week 6 – Constantinople and the Sultan’s Kitchens (Istanbul, Turkey): A rich history has given this region its well-deserved reputation as a leader in simple foods with bold flavor.

Regions of Asia (6 Week Series)
From the mountainous, spice-filled lands of western China to the extreme flavor profiles of tropical Thailand. Unravel some of the mystery behind many of the most prominent recipes and cooking techniques while discovering similarities and differences throughout the lands. Survey a different region each week and learn the essential techniques and subtle flavor secrets that make each specific cuisine so appealing. Explore and demystify the ingredients critical to the Asian pantry, bringing unique new flavor profiles to your culinary repertoire.

Week 1 – South China & Canton: One of the most gastronomically renown and adventurous regions of China. Dishes are delicately seasoned to bring out natural flavors, with an emphasis on fresh ingredients and sharp technique.
Week 2 – Northeast China: This harsh climate produces hearty, bold, and flavorful dishes. Wheat is the staple crop of Northern China, so the cuisine is largely defined by noodles, dumplings, steamed buns, and pancakes.
Week 3 – Central & West China: Spicy and pungent flavors are characteristic of West and Central China. Perhaps best known is the Sichuan Province, famous for its particularly numbing and spicy flavors resulting from liberal use of garlic and chili peppers, and the unique numbing Sichuan peppercorn.
Week 4 – Japan & Korea: These cuisines share many similarities, but the specialties from each have their own meaning and cultural symbolism pointing to their origins. Both cuisines emphasize rice (surprise!), a lot of vegetables, and red meat or fish.
Week 5 – Vietnam: A varied landscape is truly reflected in Vietnamese cuisine. Textures and flavors contrast and complement each other to provide a rounded and unique culinary experience.
Week 6 – Thailand: There’s no shortage of flavor in this bold cuisine. Thai dishes often are not considered satisfying unless they combine four tastes: sweet, sour, salty, and spicy.

Regions of France (6 Week Series)
From its lush valleys to its majestic Alpine peaks and azure Riviera coastline, France possesses a wealth of regional cuisines, each enduring over centuries. Put aside haute cuisine and fine dining to study the simple pleasures of the delicious and approachable French food you’ll find in homes and bistros. Join us on this journey as we discover the rich cuisine of the bourgeois and peasant classes that typify French regional cooking. Bon appétit!

Week 1 – Normandy: The food of Normandy is simple, but rich, thanks to the generous use of butter and cream. It is most known for apple beverages including Calvados (apple brandy) and world-renowned cheeses like Camembert.
Week 2 – Touraine: Touraine is located in the heart of the Loire Valley vineyard stretching from the Sancerre area all the way to the ocean and is known for exceptional foods and even tastier wine.
Week 3 – Burgundy: Home to beautiful scenery and delicious food, this region’s cuisine features garlic, fresh veggies, rich meats, and delicious Burgundy wine to cook with and drink.
Week 4 – Dauphine and Savoy: The French Alps are most known for hearty mountain fair, rustic dishes, and Comté – a delicious cheese found in every home in France.
Week 5 – Southwest of France: In the southwest region of France, the emphasis is on rich foods. Duck, foie gras, prunes, oysters, mushrooms and truffles are but a few specialties found in many dishes.
Week 6 – Provence: More in line with Mediterranean neighbors than France’s northern regions, Provencal cuisine emphasizes sun-ripened vegetables, seafood, fresh herbs and a liberal helping of olive oil in every dish.

Recipes highlight the dishes of each region, showcasing ingredients, cooking style, and ethnic influences comprising the local flavors. Week 1 – Piedmont: Translated to “at the foot of the mountain,” Piedmont is crowned by the Alps and is one of Italy’s best-kept food secrets. The cuisine is hearty, simple, and soothing.
Week 2 – Emilia Romagna: Largely considered the gastronomical and culinary heart of Italy, this northeast region is the origin of Italian staples Parmigiano-Reggiano, Prosciutto di Parma, and Balsamic vinegar!
Week 3 – Tuscany: This region owes its legacy to the Etruscans, who lived in northern and central Italy 3000 years ago and loved food, wine, and art. Unlike its northern neighbors, Tuscany favors unfussy, rustic foods dressed with olive oil rather than heavy sauce.
Week 4 – Lazio: Home to Rome and Vatican City, the Lazio region has always been at the hub of Italian culture. The food is made up of wholesome and iconic dishes that are quick and easy to cook.
Week 5 – Campania: Best known worldwide for pizza, Campania’s cuisine relies on sun dried vegetables, fresh farmhouse cheese, and local seafood to create bright, simple dishes.
Week 6 – Sicily: This food of this island has absorbed influences from its many invaders including the Greeks, Arabs, Normans, and Spanish. The result is a cuisine full of delightful distinctions from Italian food to the north.

Regions of Spain (6 Week Series)
Spanish cuisine, with its unique and fascinating centuries-old culinary tradition, rustic Mediterranean palate, and flair for innovation, is joining the ranks of the world’s great cuisines and capturing the attention of American food lovers. Examine the customs and culture of each destination through its culinary delights. Explore the rich flavors from bright green olive oil to spicy chorizo that have kept Spain deservedly in our culinary spotlight.

Le Grand Classic – Opéra Gateau & Sachertorte
Master two of the most famous and decadent cakes from France and Vienna. Opéra gâteau is an elaborate almond sponge cake soaked in coffee syrup, layered with chocolate ganache and coffee buttercream, and topped with chocolate icing. Sachertorte is a classic Viennese cake composed of two dense chocolate cakes separated by a thin layer of apricot jam, and enveloped in dark chocolate icing, traditionally served with unsweetened whipped cream. St. Honoré Workshop
The St. Honoré cake, also known as St. Honoratus cake, is named for the French patron saint of bakers and pastry chefs, Saint Honoré. It was invented in 1847 at the Chiboust bakery on Rue Saint-Honoré, in Paris. This classic French dessert is composed of a circle of puff pastry and a ring of pate à choux puffs dipped in caramelized sugar along the outer edge. The ring base is traditionally filled with creme chiboust (a decadent pastry cream) and finished with whipped cream using a special St. Honoré piping tip.
