The Fessenden School is an all boys independent day and boarding school serving 525 students in Pre-K to Grade 9 in West Newton, MA. Position Summary

The Fessenden School’s Food Services department seeks a full-time Head Chef to join our team in June 2021. The Head Chef is one of the leaders on a staff that operates 12 months a year and feeds a diverse school-day community of 700 people and a boarding community of 150 people, as well as caters various functions throughout the year.

The Head Chef is responsible for preparing and/or directing the preparation of food to be served, complying with all applicable sanitation, health and personal hygiene standards and following established food production programs and procedures. This position requires supervising staff and kitchen opening and/or closing.

Schedule

  • 12 months year round
  •  Monday through Friday from 7:30am to 4:00pm.

Essential Duties and Responsibilities

The essential functions include, but are not limited to the following:

Food Operation

  • Prepares or directs preparation of all food served following established production recipes, procedures, special diet orders, and systems.
  • Oversee food quality and staff culinary technique
  • Apportions food for serving.
  • Plans food production to coordinate with meal serving hours so that excellence, quality, temperature and appearance of food are preserved.
  • Serves or ensures proper serving of food for the dining hall.

Production Management

  • Determines amount and type of food and supplies required using production systems.
  • Ensures availability of supplies and food or approved substitutions in adequate time for preparation.
  • Order from vendors based on menu requirements and current inventory levels
  • Maintains daily production records.

Food Safety

  • Complies with established sanitation standards, personal hygiene and health standards.
  • Observes proper food preparation and handling techniques.
  • Stores food properly and safely, marking the date and item.
  • Completes food temperature checks before service.
  • Ensure facility meets standards for licensed operation
  • Maintain Servsafe certification and ensure compliance of Servsafe regulations

Miscellaneous

  • Reports necessary equipment repair and maintenance to supervisor.
  • Keeps the work area neat and clean at all times; cleans and maintains equipment used in food preparation.
  • Monitor cleanliness of kitchen and dining room
  • Stay current with best practices and trends in food management in schools
  • Oversee staff member’s job performance
  • Helping to set-up and break-down functions

Preferred Qualifications 

  • 5-10 years experience in volume feeding.
  • Culinary experience in an independent school setting
  • Able to lead a team of diverse employees with different skills/capabilities.
  • A high school diploma or equivalent.
  • ServSafe certificate.
  • Allergen Awareness certificate

Minimum Qualifications 

  • 5 years experience in a related food service position.
  • Knowledge of workplace safety procedures.
  • Ability to maintain professional demeanor in a high-stress situation.
  • High volume culinary experience in institutional settings.
  • Position requires working weekends and holidays during the school year.
  • Successful criminal background check, and pre-employment physical examination

  • Regularly walk and stand during the entire shift and occasionally sit.
  • Occasionally reach, lift, bend, kneel, climb, push and pull items weighing up to 80 lbs.
  • Manual dexterity; auditory and visual skills; and the ability to follow written and oral instructions and procedures.
  • Working primarily indoors in a hot environment with some work done outside.
  • Occasional exposure to sharp machinery, broken glass, metal cans, and heat sources with some potential for injury.
  • Frequent handwashing and wearing of PPE.
  • A moderate to high noise level in the work environment.
