l’ètoile is a fine dining seasonal restaurant serving dinner on Martha’s Vineyard. We are looking for eager cooks looking to learn how to execute at a high level with pride of the work you are doing. This position involves the preparation & plating in service of cold appetizers, Oysters, crudos, soups and composed salads in high energy professional & fun kitchen. And plating of desserts to order.
You will utilize and learn:

Proper handling of fresh shellfish from delivery to plate

  • opening oysters, making mignonettes, varied toppings
  • Timing and prioritizing tasks for a smooth timely service
  • curing of egg yolks and some seafood
  • baking of dessert garnishes, flaming off creek brûlée’s
  • various  vinaigrette’s and dressings
  • Handling & storage of local greens, edible flowers & herbs
  • maintain a neat, efficient and sanitized work station
  • To be properly set up & ready for a hectic & busy service
